Banoffi Pie Recipe
Banoffi
Pie originated at a restaurant called The Hungry Monk, Nr Eastbourne, Sussex
in 1972. It has become an English classic since then, mostly it is called
Banoffee Pie, but the original name is Banoffi Pie, preferred by The Hungry
Monk Restaurant.
BANOFFI PIE 8-10 SERVINGS
14 oz can sweetened Condensed Milk
8"or 9" Pastry Pie Shell (baked blind, prick with a fork & bake until crisp
per instructions)
4 med Bananas (slightly under ripe is possible)
2 cups Heavy Cream (for whipping)
1/2 tsp quality instant coffee granules
a little fresh ground coffee for dusting on top.
Place can of condensed milk in a deep saucepan, cover the can with water
(must be at least an inch over top of can) cover pan and bring to boil. (see
CAUTION)
Continue boiling for 3 hrs, checking periodically to make sure the can is
well-covered with water.
Bake Pie Crust and cool. Some recipes suggest using Digestive Biscuits
(crushed) with approx; 3 Tbls melted Butter for base, and chill.
After 3 hrs, remove can from water and let it cool thoroughly before
opening.
Spread the caramel over the baked pie crust.
Slice the Bananas and arrange them evenly over the top of the caramel.
Whip the cream and add the 1/2 tsp coffee granules to form stiff peaks.
Spread the whipped cream over the Bananas.
Dust with the additional fresh ground coffee.
Refrigerate before serving.
HINT
Banoffi Pie is a wonderful dessert to have on hand for an 'emergency'
pudding - therefore I suggest you boil 2-3 cans of Condensed Milk together
as they keep unopened in the pantry indefinitely.
CAUTION
IT IS VITAL TO TOP UP BOILING WATER IN PAN DURING THE 3HRS OF COOKING - IF
THE PAN BOILS DRY - IT WILL EXPLODE CAUSING GRAVE RISK TO LIFE & LIMB AND
KITCHEN CEILING!
